A Skin-Boosting Thanksgiving Recipe You Will Love

Fall is certainly the season for enjoying pumpkin versions of just about everything, and there are some great skin boosting benefits to it as well. For starters, it is loaded with beta carotene, a very powerful antioxidant. This gets converted to vitamin A, which is where the real skin benefits come in. Vitamin A helps to prevent wrinkles, keep skin hydrated and gives you that youthful glow. Pumpkin is also packed with vitamin C which boosts your immune system and helps protect the collagen in your skin. PUMPKIN SOUP


Ingredients:

  • 2 1/2 cups pumpkin puree
  • 4 cloves of garlic, diced
  • 2 shallots, diced
  • 1 tsp chipotle powder (for a kick!)
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 1 cup coconut milk
  • salt & pepper, to taste

Garlic Croutons:

  • loaf of day-old bread
  • 4-5 cloves of garlic, diced
  • 2-3 Tbsp high-quality olive oil


Instructions:

  • preheat oven to 350 degrees.
  • cube a loaf of your favorite day-old bread and spread on a baking sheet.
  • drizzle bread in high quality olive oil and sprinkle chopped garlic on top.
  • bake croutons for 15 minutes, or until dry and slightly crisp (don’t overcook or they will turn hard).
  • to a large saucepan, add olive oil, garlic & shallots. Cook for 2-3 minutes.
  • add remaining ingredients to the pan and bring to a simmer.
  • pour mixture into a blender, blend until smooth.
  • return to pan and cook for another 10 minutes, taste and adjust spices as needed.
  • Serve with a handful of croutons on top of each bowl.
